Sucralose

Sucralose is produced by the selective chlorination of sucrose at three hydroxyl positions, creating a molecule that activates sweet taste receptors with approximately 600× the potency of table sugar. Because sucralose is not metabolized by the body, it contributes zero calories and does not elevate blood glucose or insulin. Its exceptional thermal stability (stable up to 125°C in baked applications and higher in dry systems) and acid stability make it the preferred high-intensity sweetener for heat-processed foods and acidic beverage systems where stevia may lack stability.
