What Is Aspartame?
Aspartame is a dipeptide methyl ester — it is produced by combining two amino acids, aspartic acid and phenylalanine, in the form of a methyl ester. It is approximately 200 times sweeter than sucrose but provides minimal calories because the dose required for sweetness is so small. Unlike sucralose, aspartame is metabolised — the body cleaves it to phenylalanine, aspartic acid, and methanol upon ingestion. In healthy individuals these metabolites are processed normally; in individuals with phenylketonuria (PKU), the phenylalanine component accumulates to neurotoxic levels.
Aspartame degrades at temperatures above approximately 80°C, making it unsuitable for baking, cooking, or UHT processing — a significant application limitation relative to sucralose and stevia.

Evidence Note — IARC 2023 Classification
In July 2023, IARC (International Agency for Research on Cancer) classified aspartame as Group 2B: "possibly carcinogenic to humans" based on limited evidence from human observational studies (primarily hepatocellular carcinoma associations). This requires transparent disclosure.
Critical context that must accompany this disclosure:
- Group 2B is IARC's lowest hazard classification — it means "possibly" carcinogenic based on limited evidence, the same category as pickled vegetables, coffee (reclassified in 2016), and mobile phone radiation
- Simultaneously, JECFA completed its own independent safety evaluation and reiterated that aspartame is safe at the current ADI of 40 mg/kg bw/day, finding no sufficient reason to revise this limit
- No major food safety authority (EFSA, FDA, FSSAI) has subsequently suspended or restricted aspartame use in food
