Acesulfame Potassium (Ace-K)

Acesulfame Potassium (Ace-K) is a non-nutritive sweetener approximately 200× sweeter than sucrose, produced by the reaction of acetoacetic acid with sulfamide. Unlike aspartame, Ace-K is completely stable at high temperatures and across a wide pH range, making it an ideal co-sweetener in baked goods, heat-processed beverages, and UHT dairy products. It is most commonly used in blends with sucralose, aspartame, or stevia — where the synergistic interaction allows both sweeteners to be used at lower doses, reducing bitterness and aftertaste while achieving a cleaner, more rounded sweetness profile.
