What Is Maltodextrin?

Maltodextrin is produced by the controlled enzymatic or acid hydrolysis of starch (typically corn, wheat, rice, or potato starch), yielding a mixture of glucose polymers of varying chain lengths. The degree of hydrolysis is characterised by Dextrose Equivalent (DE): a pure glucose monomer (dextrose) has a DE of 100; unhydrolysed starch has a DE of approximately 0. Commercial maltodextrins typically have a DE of 5–20. Lower DE values indicate longer-chain polymers with less sweetness and a more starchy texture; higher DE values indicate shorter chains, more sweetness, and faster digestion.
