What Is Sucralose?
Sucralose is a non-caloric high-intensity sweetener produced by selective chlorination of sucrose — replacing three hydroxyl groups with chlorine atoms. The resulting molecule is approximately 600 times sweeter than sucrose and is not metabolised to provide energy (approximately 85% is excreted unchanged in faeces; the small absorbed fraction is also excreted unchanged in urine). It is the only high-intensity sweetener in the YNP catalogue derived from sugar, which historically supported the "made from sugar, tastes like sugar" positioning used by the Splenda brand (a registered brand — not mentioned on labels).
