What Is Cocoa Powder?
Cocoa powder is produced from cacao beans (Theobroma cacao) through a multi-step process: fermenting, drying, roasting, and shelling the beans produces "nibs"; pressing the nibs extracts cocoa butter; the remaining solid is the cocoa press cake, which is milled to produce cocoa powder. Two key types exist:
Natural Cocoa Powder: Slightly acidic (pH approximately 5.3–5.8), with a strong, pure chocolate flavour. Reacts with baking soda (sodium bicarbonate) in recipes; less suitable where alkalis would affect colour or flavour balance.
Alkalized (Dutch Process) Cocoa Powder: Treated with an alkali (typically potassium carbonate) to raise pH (6.8–8.1), resulting in a darker colour, milder flavour, and better water dispersibility. Does not react with baking soda — requires baking powder in recipes.

Evidence Note — Cocoa Flavanols
Flavanols in cocoa (primarily epicatechin and catechin) have been associated with cardiovascular benefits in controlled trials. The COSMOS-Cocoa trial (Sesso et al. 2022) — a large randomized controlled trial of a cocoa flavanol supplement (500 mg/day cocoa flavanols) in older US adults — found significant reductions in cardiovascular mortality over 3.6 years of follow-up. This is one of the strongest trials for dietary flavanols. Note: EFSA has approved a health claim that cocoa flavanols contribute to normal blood flow, specifically for cocoa containing at least 200 mg of flavanols per 40 g daily serving.
Cocoa powder's flavanol content varies significantly by origin, processing, and particularly alkalization (which substantially reduces flavanol content). Natural cocoa powder retains more flavanols than heavily alkalized cocoa.
