Aspartame

Aspartame is a methyl ester of the dipeptide formed by L-Aspartic Acid and L-Phenylalanine. It delivers approximately 200× the sweetening power of sucrose with a clean, sugar-identical flavor onset and minimal metallic or bitter aftertaste — a property that distinguishes it from other high-intensity sweeteners. Its primary limitation is thermal sensitivity (degradation above 85°C in aqueous systems), which restricts its use to cold-processed or ambient-stable food systems.
