Yeast Protein

Quick Summary

  • Category: Seasoning Snack (YNP site classification) · Sourcing Origin: China · Form: Powder
  • Produced from Saccharomyces cerevisiae (baker's/brewer's yeast) — provides a complete amino acid profile with all essential amino acids
  • Distinct from yeast extract (flavour-active soluble fraction) — yeast protein refers to the protein-concentrated fraction from yeast cells
  • Dual value: nutritional (complete plant protein, vegan-suitable) and functional/flavour (natural umami and savoury notes)

What Is Yeast Protein?

Yeast protein is derived from single-celled fungi — most commonly Saccharomyces cerevisiae (baker's or brewer's yeast) — by processing the yeast biomass to concentrate the protein fraction. Unlike yeast extract, which is the soluble flavour fraction rich in glutamates and B-vitamins, yeast protein concentrates the structural protein content from the yeast cell, resulting in a higher-protein ingredient (typically 50–60%+ protein by dry weight, depending on processing).

Yeast is a complete protein source — it contains all nine essential amino acids including lysine, which is limiting in most grain-based plant proteins. The cell walls of Saccharomyces cerevisiae also contain beta-glucans, which have independently established immune function support in the research literature.
