Fructose
Crystalline Fructose is the pure monosaccharide form of fruit sugar, produced by the enzymatic isomerization of glucose derived from corn or beet starch. At the same concentration, fructose is approximately 1.7× sweeter than sucrose — enabling sugar reduction without compromising sweetness. Fructose is metabolized through the liver in a non-insulin-dependent pathway, resulting in a lower acute glycemic response compared to glucose and sucrose — making it relevant for diabetic-friendly and low-GI product formulations. It also demonstrates hygroscopic behavior that improves moisture retention in baked goods, extending shelf life.

Key Benefits
- 1.7× sucrose sweetness — reduces total sugar usage while maintaining equivalent sweetness target.
- Non-insulin-dependent hepatic metabolism — lower glycemic impact than glucose or sucrose.
- Hygroscopic character extends moisture retention and shelf life in baked products.
- Enhances fruit flavor perception — preferred for fruit-flavored beverages and confectionery.
- Solubility (360g/L at 25°C) higher than sucrose — concentrated sweetening in liquid applications.
