What Is Soya Sauce Powder?
Soya Sauce Powder is produced by spray-drying traditional fermented soy sauce. Soy sauce itself is produced by fermenting soybeans (often with wheat) using Aspergillus sojae or A. oryzae moulds, followed by brine fermentation by lactic acid bacteria and yeasts. This fermentation process develops the characteristic complex flavour profile — umami (from glutamates), savoury, slightly sweet, and mildly acidic — and produces a range of flavour-active compounds including amino acids, organic acids, and Maillard reaction products. Spray-drying concentrates and stabilises these flavours into a shelf-stable powder.
