Universal Beverage Formulation Principles
Test solubility in your specific system. Published solubility values are measured in pure water at a defined temperature. Your beverage matrix — pH, temperature, other dissolved solutes — will affect actual in-system solubility.
Stability testing is not optional. A beverage formulation must be stability-tested at its intended storage temperature for at least the intended shelf life — typically 6–12 months for commercial products. Accelerated stability testing (40°C/75% RH, 3–6 months) can provide early indicators.
Regulatory category before formulation. Under FSSAI, functional beverages fall under multiple potential categories (energy drink, sports drink, dietary supplement, functional food). The category determines permitted ingredients, use levels, and label claims. Confirm the regulatory category before finalising which actives to include.
