Glossary
Plain-language definitions of the technical, regulatory, manufacturing, and quality terms used across the nutraceutical and food ingredient industry.
A
Accelerated Stability Testing
A method for predicting long-term ingredient or product stability by exposing samples to elevated temperature and humidity conditions (typically 40°C/75% relative humidity per ICH Q1A guidelines) for a defined period and extrapolating real-time stability outcomes using mathematical degradation models (typically the Arrhenius equation). Used to establish or validate retest dates and shelf-life claims without waiting the full real-time period. Results should always be confirmed by at least some real-time stability data before labeling claims are finalised.
Acetyl-L-Carnitine (ALCAR)
An acetylated form of L-carnitine, often chosen in nutraceutical formulations for its higher bioavailability and use in cognitive and energy-support products.
Adequate Intake (AI)
A reference dietary intake value used when a Recommended Dietary Allowance (RDA) cannot be established due to insufficient evidence for the average nutrient requirement. The AI is based on observed or experimentally determined intake levels in healthy populations. Used by NIH for nutrients such as biotin (30 mcg/day for adults) and choline (550 mg/day for adult men). EFSA uses similar concepts under "Adequate Intake" in its DRV framework.
ADI (Acceptable Daily Intake)
The estimated amount of a food additive or contaminant that a person can consume daily over a lifetime without appreciable risk to health. Established by JECFA and adopted by national regulatory authorities including EFSA and FDA. Expressed in mg (or mcg) per kg of body weight per day (e.g. sucralose ADI: 15 mg/kg bw/day). An ADI of "not specified" — used for substances like xanthan gum — is the highest safety classification, indicating safety at levels required for functional effect with no numeric limit necessary. Contrast with NRV (nutrient reference value for vitamins/minerals) and UL (tolerable upper intake level for nutrients).
Allergen
A substance that triggers an immune response in sensitised individuals. In food regulation, "major allergens" are specific ingredients subject to mandatory labeling: in the USA (FDA), these are milk, eggs, fish, shellfish, tree nuts, peanuts, wheat, soybeans, and sesame (top 9); in the EU, 14 allergens must be declared on the label. Soy, milk, and wheat are particularly relevant to the nutraceutical and food ingredient sector.
Alpha-Ketoglutarate (AKG)
An intermediate in the Krebs (citric acid) cycle and in amino acid metabolism; the carbon skeleton left when glutamate is transaminated. In supplement formulation, alpha-ketoglutarate appears as a salt component in compound ingredients: L-Arginine Alpha-Ketoglutarate (AAKG) and Calcium Alpha-Ketoglutarate (Ca-AKG). In AAKG, the AKG component theoretically supports cellular energy metabolism via Krebs cycle integration, though its specific contribution to the product's performance effects is difficult to isolate.
Amino Acid (Essential)
An amino acid that cannot be synthesised by the human body in sufficient quantities and must be obtained through diet or supplementation. There are nine essential amino acids (histidine, isoleucine, leucine, lysine, methionine, phenylalanine, threonine, tryptophan, and valine). Contrast with non-essential amino acids (synthesised endogenously) and conditionally essential amino acids (essential only under physiological stress).
Amino Acid Derivative
A compound built from a base amino acid (such as creatine, carnitine, or glutamine) that has been chemically modified to improve stability, solubility, or absorption.
Anhydrous
A term indicating the absence of water molecules in a compound's crystal structure or composition. "Anhydrous" forms of ingredients (e.g. caffeine anhydrous, citric acid anhydrous, betaine anhydrous) are fully dry, more concentrated per gram than hydrated equivalents, and typically easier to handle in powder blending for supplement manufacturing. Contrast with monohydrate (e.g. citric acid monohydrate, creatine monohydrate), which contains one molecule of water per molecular unit.
Anti-caking Agent
A food additive that prevents the formation of lumps (caking) in powdered or granulated ingredients and finished products. Anti-caking agents work by absorbing moisture before it bridges powder particles together (e.g. silicon dioxide, INS 551) or by coating particles to reduce surface stickiness. Critical in supplement manufacturing for ingredients prone to hygroscopic caking (amino acids, some vitamins, pectin) and in capsule/tablet production where consistent powder flow is required.
Antioxidant
A substance that inhibits oxidative degradation. In food manufacturing, antioxidants serve two roles: as nutritional ingredients (Vitamin C, Vitamin E) and as food additives (INS 300 — ascorbic acid; INS 304 — ascorbyl palmitate; INS 306-309 — tocopherols). In biological systems, antioxidants neutralise free radicals, reducing oxidative damage to cells and tissues.
Assay
A laboratory measurement of the concentration or activity of a specific substance in a sample. On a Certificate of Analysis, the assay value confirms the actual percentage of the active ingredient in a batch — typically expressed as a percentage of the theoretical or labelled amount (e.g. "Assay (as L-Carnitine): 99.2%"). The assay result is one of the most important values to verify on a COA before accepting a shipment.
B
Bioavailability
The proportion of an ingredient that is actually absorbed and used by the body after consumption, a key consideration when comparing different forms of the same active (e.g. magnesium oxide vs magnesium L-threonate).
Branched-Chain Amino Acid (BCAA)
A collective term for three essential amino acids that share a branched aliphatic side chain: L-Leucine, L-Isoleucine, and L-Valine. Unlike most amino acids, BCAAs are primarily catabolised in skeletal muscle rather than the liver. The 2:1:1 ratio (leucine:isoleucine:valine) is the most commonly used commercial blend in sports nutrition. The evidence for isolated BCAA supplementation as a standalone muscle-building intervention in well-nourished athletes is limited and contested; see Section 21 (BCAA 2:1:1) and Section 43 (Individual BCAAs) for detailed evidence discussion.
Bulk Pack Size
The standard quantity an ingredient ships in, commonly 15–25 kg in bags or drums for the powdered ingredients YNP supplies; confirmed per SKU on each product page.
C
Catecholamine
A class of biologically active amines derived from the amino acid L-Tyrosine, including dopamine, norepinephrine (noradrenaline), and epinephrine (adrenaline). Catecholamines function as both neurotransmitters (in the central nervous system) and hormones (released by the adrenal medulla into the bloodstream). Their synthesis pathway — phenylalanine → tyrosine → L-DOPA → dopamine → norepinephrine → epinephrine — is the biochemical rationale for L-Tyrosine supplementation in cognitive and stress-response products.
Certificate of Analysis (COA)
A document issued per batch confirming that an ingredient meets agreed specifications for purity, composition, and contaminants.
Choline
An essential nutrient required for the synthesis of the neurotransmitter acetylcholine, the structural phospholipid phosphatidylcholine, and the methyl donor betaine. Officially classified as an essential nutrient by NIH and EFSA, with an Adequate Intake (AI) of 550 mg/day (men) and 425 mg/day (women) per NIH. The body synthesises choline in small amounts, but dietary and supplemental intake is needed to meet most adults' requirements. Choline Bitartrate is the cost-effective salt form in the YNP catalogue; other forms include CDP-choline and alpha-GPC. Not the same as betaine (betaine is a choline metabolite/methyl donor — related but distinct compounds).
Clean Label
A formulation or ingredient positioning that emphasizes recognizable, minimally processed components, often relevant when choosing between synthetic and naturally derived flavor or seasoning ingredients.
Collagen
The most abundant structural protein in the human body, comprising approximately 30% of total body protein. Found in skin, bone, cartilage, tendons, ligaments, and connective tissue. Characterised by a repeating Gly-X-Y tripeptide sequence (where glycine is at every third position, and X and Y are frequently proline and hydroxyproline). Several collagen types exist; Type I collagen predominates in skin and bone and is the primary type in fish collagen peptides (Section 22). Oral collagen supplementation (as hydrolysed peptides) is associated with improved skin elasticity and joint comfort in controlled trials; the precise mechanism of delivery to target tissues remains an area of ongoing research.
Concentrate (Protein)
A protein ingredient typically containing 70–85% protein by weight, with the remainder made up of fats, carbohydrates and minerals (e.g. Whey Protein Concentrate 80%).
Conditionally Essential Amino Acid
An amino acid that is normally synthesised adequately by the body under standard physiological conditions, but whose endogenous production becomes insufficient during periods of illness, intensive physical stress, or accelerated growth. L-Glutamine, L-Arginine, L-Tyrosine, and Taurine are commonly classified as conditionally essential. Formulators should be precise about which population and condition makes an amino acid "conditionally essential" when making label claims.
D
Degree of Esterification (DE)
A specification for pectin expressing the proportion of galacturonic acid residues whose carboxyl groups are esterified with methanol, expressed as a percentage. DE determines whether a pectin is high-methoxyl (HM, DE >50%) or low-methoxyl (LM, DE <50%) — which in turn governs its gelling mechanism, required sugar and calcium concentrations, and appropriate food applications.
Dextrose Equivalent (DE)
A measure of the degree of starch hydrolysis, expressed as a percentage of reducing power relative to pure dextrose (glucose, which has a DE of 100). An unmodified starch has a DE of approximately 0; dextrose monohydrate has a DE of 100. Maltodextrin (DE 5–20) occupies the middle range. Higher DE indicates shorter glucose chains, more sweetness, lower viscosity, and faster digestion. Lower DE indicates longer chains, less sweetness, higher viscosity, and slower digestion. Always specify DE range when ordering maltodextrin — it is the single most important specification for the product.
DIAAS (Digestible Indispensable Amino Acid Score)
The protein quality evaluation method recommended by FAO/WHO, replacing PDCAAS. DIAAS measures true ileal digestibility of individual indispensable amino acids and expresses protein quality relative to a reference amino acid pattern for a specific age group. Unlike PDCAAS, DIAAS does not cap at 1.0, allowing meaningful distinction between high-quality proteins. Generally, dairy proteins score higher than plant proteins under DIAAS.
Dietary Supplement
A product intended to supplement the diet, typically supplied as capsules, tablets, or powders, and built from ingredients such as those in YNP's Nutraceuticals/Dietary Supplements category.
Drum Packaging
A rigid container format used for certain functional ingredients (such as pectins) to protect against moisture and contamination during bulk transport.
E
EFSA
The European Food Safety Authority — the European Union's independent scientific body responsible for risk assessment on food and feed safety, including evaluating and setting Acceptable Daily Intake (ADI) levels for food additives and sweeteners.
Elemental Content
The amount of the biologically active mineral ion (e.g. magnesium, calcium, zinc) provided per gram of a mineral salt or compound. When comparing magnesium forms, elemental magnesium content — not total compound weight — determines the dose of active mineral delivered. Magnesium L-Threonate, for example, provides less elemental magnesium per gram than magnesium oxide due to the additional molecular weight of the threonate ligand, but is valued for its specific neurological application.
Emulsifier
A substance that stabilises an emulsion — a mixture of two immiscible liquids (typically water and oil). Emulsifiers contain both hydrophilic (water-loving) and hydrophobic (oil-loving) regions, allowing them to sit at the interface between oil and water droplets and prevent separation. Common food emulsifiers include lecithin (INS 322), mono- and diglycerides (INS 471), and certain modified starches.
Ergogenic
A substance, device, or practice that enhances physical performance, endurance, or recovery beyond the effects of normal training alone. In sports nutrition, ergogenic aids include Tier 1 ingredients (creatine monohydrate, caffeine, beta-alanine) with consistent, high-quality evidence as well as many other ingredients with less established evidence. WADA monitors certain ergogenic substances for potential inclusion on the prohibited list; formulators of elite sports products should verify current WADA status for each ingredient.
F
Fermentation (Industrial)
A controlled biological process in which microorganisms (bacteria, yeast, fungi) are used to produce a desired compound from a carbon/nutrient source. In the food and nutraceutical ingredient industry, fermentation is the production method for many key ingredients: citric acid (Aspergillus niger fermenting glucose), xanthan gum (Xanthomonas campestris), yeast protein (Saccharomyces cerevisiae growth), certain vitamins (riboflavin, Vitamin B12), amino acids (many are produced by bacterial fermentation of glucose), and glutamic acid (for MSG). The fermentation origin does not make an ingredient "natural" in a regulatory sense — "naturally derived" claims depend on specific regulations in each market.
Flavanol / Polyphenol
Flavanols (also called flavan-3-ols) are a subclass of polyphenols — plant-derived secondary metabolites with antioxidant activity. The most relevant flavanols in the YNP catalogue context are epicatechin and catechin, found in cocoa powder (Section 72) and associated with the cardiovascular health evidence for cocoa flavanols (EFSA health claim; COSMOS-Cocoa RCT 2022). Polyphenols as a broader class include flavanols, flavonoids, resveratrol, and others — they are not vitamins or minerals but are increasingly studied for health effects.
Flow Agent
A substance added in small quantities to powdered ingredients or blends to reduce interparticle adhesion and improve flow through handling, processing, and filling equipment. Silicon dioxide (INS 551) is the most widely used flow agent in supplement manufacturing. Distinct from anti-caking agents in that flow agents primarily improve dynamic flow (during processing) rather than static cake formation prevention — in practice, many ingredients (including silicon dioxide) serve both functions.
Food Additive
A substance intentionally added to food during processing, preparation, packaging, transport, or storage to serve a specific technological function (e.g. preservation, thickening, colouring, flavouring, acidity regulation). Food additives are regulated under the Codex Alimentarius General Standard for Food Additives (GSFA) and by national authorities — FSSAI in India, EFSA in the EU, FDA in the USA. Each additive is assigned an INS number (international) or E-number (EU).
Food Preservative
A food additive used to inhibit the growth of bacteria, yeasts, and moulds, or to slow oxidative spoilage, extending shelf life and maintaining the safety of a formulated food or beverage product.
Fortification
The deliberate addition of one or more vitamins, minerals, or other micronutrients to a food or ingredient at levels above what it would naturally contain, to address nutritional gaps or improve the product's nutritional profile. Distinct from "enrichment" (restoring nutrients lost during processing) and from supplementation (delivery in supplement dosage form).
Free Amino Acid
An amino acid supplied in its unbound, non-peptide-linked form, allowing for the fastest possible absorption compared to amino acids bound in di-, tri-, or polypeptide chains.
Free Radical
A reactive molecule or atom with one or more unpaired electrons, making it highly chemically reactive. In biological systems, free radicals (including reactive oxygen species such as superoxide, hydroxyl radical, and hydrogen peroxide) are produced during normal cellular metabolism and in response to environmental stressors. Antioxidants (including glutathione, Vitamin C, Vitamin E) neutralise free radicals by donating electrons, reducing oxidative damage to proteins, lipids, and DNA. Excessive free radical production relative to antioxidant capacity is termed oxidative stress.
FSSAI
The Food Safety and Standards Authority of India, the regulatory body whose compliance documentation accompanies applicable ingredients supplied into the Indian market.
Fumarate
The salt or ester of fumaric acid, a dicarboxylic acid and a naturally occurring intermediate in the Krebs (citric acid) cycle. Fumarate appears in the YNP catalogue as a salt form of L-Carnitine (L-Carnitine Fumarate) and is also used as a food acidulant (fumaric acid/fumarate, Codex INS 297). In L-Carnitine Fumarate, the fumarate component is the counter-ion providing stability — the L-Carnitine component provides the biological activity.
Functional Food
A food product formulated to deliver a health benefit beyond basic nutrition, often built using functional ingredients such as pectin, fiber, or fortified proteins.
Functional Ingredient
An ingredient added to a formulation primarily for its functional property — gelling, stabilizing, emulsifying or texturizing — rather than for flavor or base nutrition.
G
Gelling Agent
An ingredient, such as citrus or apple pectin, that causes a liquid formulation to thicken into a gel, commonly used in confectionery and fruit-based products.
Glycaemic Index (GI)
A ranking system for carbohydrate-containing foods based on the speed and extent to which they raise blood glucose levels after consumption, relative to pure glucose (GI = 100) or white bread (GI = 100 on some scales). Fructose has a low GI (~15–25) due to its liver-first metabolism, while maltodextrin has a high GI (~85–110). The GI of an ingredient in isolation does not always predict the GI of the finished food product, which depends on portion size, cooking method, fat/protein/fibre content, and other factors.
Glycosaminoglycan (GAG)
A class of long, unbranched polysaccharide chains composed of repeating disaccharide units, typically containing an amino sugar (N-acetylglucosamine or N-acetylgalactosamine) and a uronic acid (glucuronic acid or iduronic acid). Glycosaminoglycans are major structural components of the extracellular matrix. Key examples include hyaluronic acid (a non-sulfated GAG found in synovial fluid and skin), chondroitin sulfate, and heparan sulfate. Sodium hyaluronate (Section 51) is the sodium salt of the glycosaminoglycan hyaluronic acid.
GMP (Good Manufacturing Practice)
A system of quality management standards and operating procedures ensuring that products are consistently produced and controlled according to quality standards. GMP compliance is required for food ingredient manufacturers and is one of the primary quality markers buyers should request evidence of (typically via a GMP certificate) when evaluating a new supplier or auditing an existing one.
Grade (Ingredient)
A classification indicating an ingredient's purity, processing method, or intended application (e.g. food grade vs pharmaceutical grade).
GRAS (Generally Recognized As Safe)
An FDA (USA) designation for substances that are considered safe for their intended use in food by qualified scientific experts. GRAS status allows a substance to be used in food without individual premarket FDA approval for each application. Xanthan gum, many amino acids, and numerous food additives hold GRAS status in the USA.
H
Heavy Metal (food safety context)
In food safety regulation, "heavy metals" refers to a defined group of metallic elements that are toxic at certain concentrations and can accumulate in food chains and human tissue. The four of primary concern in food and nutraceutical ingredients are lead (Pb), arsenic (As), cadmium (Cd), and mercury (Hg). Regulatory bodies including JECFA, EFSA, FDA, and FSSAI establish maximum limits for these elements in food categories and ingredients. Testing for all four is standard practice for high-risk ingredient categories (marine-sourced, botanical, and mineral-derived ingredients in particular).
High-Methoxyl Pectin (HM Pectin)
A class of pectin with a degree of esterification (DE) greater than 50%. HM pectin gels by forming hydrogen bonds and hydrophobic interactions in the presence of high sugar concentrations (typically >55%) and low pH (typically <3.5). It is used in traditional jams, jellies, fruit spreads, and confectionery gels. Setting speed (fast-set vs slow-set) is determined by the specific DE within the HM range.
Homocysteine
A sulfur-containing amino acid produced as a metabolic intermediate in the conversion of methionine to cysteine. Elevated plasma homocysteine (hyperhomocysteinemia) is associated with increased cardiovascular risk in observational studies. Betaine anhydrous (TMG), folate (Vitamin B9), and Vitamin B12 are the primary methyl donors involved in remethylating homocysteine back to methionine, reducing circulating homocysteine levels. This is the primary mechanistic basis for betaine anhydrous's cardiovascular health positioning (Section 47).
Hyaluronic Acid (HA)
See Sodium Hyaluronate (Section 51). A glycosaminoglycan naturally present in high concentrations in synovial fluid, the vitreous humor of the eye, and the dermis of the skin. In supplement contexts, it is supplied as sodium hyaluronate (the sodium salt form). The terms "hyaluronic acid" and "sodium hyaluronate" are often used interchangeably in consumer-facing product descriptions, though they are chemically distinct (free acid vs sodium salt).
Hydrocolloid
A substance that forms a gel, viscous solution, or colloidal dispersion when in contact with water. Hydrocolloids are widely used in food manufacturing as thickeners, gelling agents, stabilizers, and emulsifiers. The YNP catalogue includes several hydrocolloids: citrus pectin, apple pectin, and xanthan gum. Other common hydrocolloids (not currently in the YNP catalogue) include carrageenan, guar gum, and locust bean gum.
Hydrolysis (Industrial)
The chemical breakdown of a large molecule (protein, starch, polysaccharide) into smaller components (amino acids, glucose, oligopeptides) using water — catalysed by acids, alkalis, or enzymes. In the nutraceutical industry, hydrolysis is used to produce: hydrolysed vegetable protein (HVP) from plant protein; collagen peptides from native collagen; maltodextrin from starch; and whey protein hydrolysates from whey protein. The method of hydrolysis (acid vs enzymatic) affects the flavour profile, degree of hydrolysis, and potential contaminant formation (e.g. 3-MCPD in acid-hydrolysed proteins).
Hydrolyzed Vegetable Protein (HVP)
A processed protein ingredient broken down into amino acids and used to deliver savory, umami flavor in seasoning and snack applications.
Hygroscopic
Describing a substance that readily absorbs moisture from the surrounding air. Highly hygroscopic ingredients — including L-Carnitine Base, certain amino acids (particularly taurine), and some vitamins — require sealed, dry storage conditions at controlled relative humidity to maintain quality and prevent caking or clumping. Hygroscopic ingredients must typically be stored in sealed drums or bags with desiccant, in environments with controlled humidity.
I
INS (International Numbering System)
The Codex Alimentarius numbering system for food additives, used internationally as a language-neutral identifier. INS numbers are assigned to approved food additives to identify them without relying on chemical names that vary by language (e.g. INS 415 = Xanthan gum, INS 440 = Pectins, INS 300 = Ascorbic acid, INS 621 = Monosodium glutamate). In the EU, INS numbers broadly correspond to E-numbers, though the two systems are not perfectly identical.
Isolate (Protein)
A protein ingredient processed to a higher purity than concentrate, typically 90%+ protein by weight, with most fat and carbohydrate removed (e.g. Whey Protein Isolate).
L
Lactose
The primary sugar found in milk and dairy products, composed of glucose and galactose; relevant to allergen and lactose-intolerance labelling considerations for dairy-derived ingredients such as whey and casein.
Low-Methoxyl Pectin (LM Pectin)
A class of pectin with a degree of esterification (DE) less than 50%. Unlike HM pectin, LM pectin gels through ionic crosslinking with calcium ions rather than requiring high sugar concentrations. This makes LM pectin suitable for low-sugar, diet, and sugar-free products, as well as dairy-based gels and acidic beverages where HM pectin's sugar requirement is not achievable. Amidated LM pectin (LMA), modified with ammonia, offers even more flexible gelling conditions.
M
Maillard Reaction
A complex series of non-enzymatic chemical reactions between amino acids (or proteins) and reducing sugars (such as glucose, fructose, or lactose) under heat. The Maillard reaction is responsible for the browning, roasting, and characteristic flavour development in cooked and processed foods — bread crust, roasted coffee, seared meat, and reaction flavours like HVP RFC are all Maillard-driven. In food manufacturing, it is both desirable (flavour development in bakery) and potentially problematic (uncontrolled browning, formation of acrylamide at very high temperatures). In seasoning applications, controlled Maillard reactions are used to deliberately produce specific reaction flavours (chicken, beef, savoury).
Malate / Malic Acid
The salt/ester of malic acid, a dicarboxylic acid naturally found in apples and many fruits. Malate is a Krebs cycle intermediate involved in aerobic energy metabolism. In supplement formulation, malate appears as a component of combination ingredients: L-Citrulline DL-Malate (Section 61) and potentially in creatine malate formulations. Malic acid is also used as a food acidulant (Codex INS 296). In L-Citrulline DL-Malate, the malate component is theorised to support energy metabolism independently of citrulline's nitric oxide pathway effects — though isolating this contribution in clinical research is methodologically difficult.
Methyl Donor
A compound that contributes a methyl group (–CH₃) to biochemical reactions, serving as a substrate for methyltransferase enzymes. Methyl donation is essential for DNA methylation, neurotransmitter synthesis, homocysteine remethylation, and the synthesis of creatine and phosphatidylcholine. Key dietary methyl donors include betaine (trimethylglycine), choline, folate (Vitamin B9), and Vitamin B12. In supplement formulation, betaine anhydrous (Section 47) is the most commonly used dedicated methyl-donor ingredient.
Methylxanthine
A class of naturally occurring alkaloids that includes caffeine, theobromine, and theophylline — all sharing a xanthine core structure with methyl group substitutions at different positions. Methylxanthines act as central nervous system stimulants primarily by blocking adenosine receptors, reducing the perception of fatigue. Caffeine anhydrous (Section 46) and cocoa powder (Section 72 — theobromine) are the two YNP catalogue ingredients containing methylxanthines. Caffeine is the most potent CNS stimulant of the three; theobromine (in cocoa) is milder and longer-acting.
Micellar Casein
A slow-digesting dairy protein that retains its natural micellar structure, valued in nutraceutical and sports nutrition formulations for sustained amino acid release.
Monohydrate
A compound containing one molecule of water per formula unit of the main molecule as part of its crystalline structure. Monohydrate forms are common in food and supplement ingredients: creatine monohydrate, citric acid monohydrate, dextrose monohydrate. Contrast with anhydrous (no water). Monohydrate forms can lose their crystallisation water (effloresce) if exposed to very low humidity or elevated temperature — this does not destroy the compound but changes its physical characteristics and precise dose per gram. Confirm whether the monohydrate or anhydrous form is specified in any application requiring precise water content management (e.g. effervescent products).
MOQ (Minimum Order Quantity)
The smallest quantity of an ingredient a supplier will sell per order, a key factor when comparing bulk suppliers.
mTORC1 (Mechanistic Target of Rapamycin Complex 1)
A protein kinase complex that functions as a central cellular nutrient and energy sensor and controls the initiation of protein synthesis. In the context of muscle protein synthesis, mTORC1 activation is the primary signalling event that initiates translation of muscle proteins. L-Leucine is the most potent amino acid activator of mTORC1 — this is the mechanistic basis for leucine's central role in the protein synthesis response to a meal or post-exercise nutrition. mTORC1 is also activated by insulin and growth factors.
N
Neurotransmitter
A chemical messenger that transmits signals across a synapse from one neuron to another, or from a neuron to a target cell (muscle cell, gland cell). Major neurotransmitters relevant to supplement formulation include acetylcholine (synthesised from choline — Sections 49), dopamine, norepinephrine (synthesised from tyrosine — Section 45), serotonin (synthesised from tryptophan), GABA, and glycine (an inhibitory neurotransmitter in the brainstem and spinal cord — Section 44). The term is often misused in marketing copy — a dietary supplement does not "increase neurotransmitter levels" in any simple or direct way.
Niacin (Vitamin B3)
A water-soluble B-vitamin used in fortified foods, multivitamin blends and nutraceutical formulations to support energy metabolism.
Nitric Oxide
A signalling molecule produced in the body from L-arginine (and, independently, from dietary nitrate) that relaxes vascular smooth muscle and increases blood flow — the primary mechanism behind "pump" and vascularity claims in pre-workout nutrition.
Nitrogen
An essential element and structural component of every amino acid; nitrogen balance (intake vs. excretion) is a standard measure used to assess whether an amino acid or protein source supports tissue repair and growth.
Nootropic
A broad, loosely defined term for any substance claimed to improve cognitive function, including memory, focus, creativity, or motivation. There is no regulatory definition of "nootropic" in most jurisdictions, and the term is used inconsistently across products. In the YNP catalogue, ingredients sometimes positioned as nootropics include L-Tyrosine (Section 45, stress-context cognitive evidence), Choline Bitartrate (Section 49, acetylcholine precursor), Caffeine (Section 46, well-established attention and alertness effects), and Magnesium L-Threonate (Section 25, cognitive/brain magnesium research). Claim language should be based on the specific evidence available for each ingredient rather than the generic "nootropic" label.
Novel Food
A food or food ingredient that has not been consumed to a significant degree by the human population of a given regulatory area before a specified cutoff date. Under EU Regulation 2015/2283, this is generally defined as food not consumed significantly before 15 May 1997. In India, FSSAI's novel food provisions require prior regulatory approval before any ingredient not covered by existing Indian food standards can be commercially used or imported.
NRV (Nutrient Reference Value)
The recommended daily intake of a vitamin or mineral used as the basis for nutritional labeling "% daily reference intake" declarations on food and supplement products. Codex Alimentarius sets international NRVs; national equivalents include RDA (Recommended Dietary Allowance, USA/NIH), DRV (Dietary Reference Value, EU/EFSA), and PRI (Population Reference Intake, EFSA). When labeling a product in multiple markets, each market's applicable reference values must be used.
Nutraceutical
A product or ingredient derived from food sources that provides health or medical benefits, sitting at the intersection of "nutrition" and "pharmaceutical."
P
Particle Size
A specification describing how finely an ingredient is milled, which affects solubility, mouthfeel, and blending performance in a finished formulation.
PDCAAS (Protein Digestibility Corrected Amino Acid Score)
An earlier protein quality evaluation method, now recommended to be replaced by DIAAS per FAO/WHO. PDCAAS measures amino acid content corrected for digestibility relative to a reference amino acid pattern but caps its score at 1.0 — which can overstate the quality of plant proteins with limiting amino acids by not capturing deficiencies relative to a complete protein. DIAAS is more precise for distinguishing protein quality between animal and plant sources.
Pectin
A naturally occurring polysaccharide, typically sourced from citrus peel or apple pomace, used as a gelling and stabilizing agent in food and beverage applications.
pH Adjuster / Acidulant
A food additive used to control or adjust the acidity (pH) of a food product. Acidulants (pH-lowering agents) are the most common in food manufacturing, used to achieve target acidity for flavour balance, preservation (lower pH inhibits many microorganisms), and functional ingredient performance (pectin gelling requires low pH; certain stabilisers are pH-sensitive). Citric acid (INS 330) is the most widely used acidulant globally. Other acidulants include lactic acid, phosphoric acid, and malic acid. Food-grade pH-adjustment can also use buffers and alkalis (sodium bicarbonate, potassium carbonate) to raise pH where needed (e.g. alkalized cocoa powder).
Phenylketonuria (PKU)
A rare inherited metabolic disorder in which the enzyme phenylalanine hydroxylase is defective or absent, preventing the normal conversion of phenylalanine to tyrosine. This leads to phenylalanine accumulation, which is neurotoxic at high concentrations. PKU is managed by a strict low-phenylalanine diet. Products containing aspartame (which metabolises to phenylalanine) must carry mandatory "Contains Phenylalanine" or "Phenylketonurics: Contains Phenylalanine" warnings in most markets. Individuals with PKU require L-Tyrosine supplementation (Section 45) as an essential amino acid since they cannot synthesise it from phenylalanine.
Polyphenol / Flavanol
A broad class of plant-derived compounds (including flavanols) associated with antioxidant activity; relevant to ingredients sourced from botanical or fermented raw materials.
Polysaccharide
A carbohydrate made of many monosaccharide units joined by glycosidic bonds; common examples relevant to ingredient formulation include starches, pectin, and xanthan gum.
Premix
A pre-blended combination of vitamins, minerals, or other micronutrients formulated for consistent dosing inside a larger product.
Protein Concentration
The percentage of total protein content in a protein ingredient by dry weight, the primary spec used to differentiate concentrate, isolate, and hydrolysate forms.
Pseudoplastic
A flow behaviour where a substance's apparent viscosity decreases under applied shear stress and recovers when shear is removed. Xanthan gum solutions are characteristically pseudoplastic — thick and viscous at rest, thinning readily under the shear of pumping, pouring, or eating, then recovering thickness. This makes pseudoplastic ingredients like xanthan gum valuable in products that must be thick enough to suspend particles at rest but flow easily when dispensed.
R
RDA
Recommended Dietary Allowance — the average daily dietary intake level of a nutrient sufficient to meet the requirements of nearly all healthy individuals in a population group, as established by national or international nutrition authorities.
Reaction Flavour
A flavor ingredient created through a controlled heating reaction between amino acids and reducing sugars, producing authentic savory (e.g. chicken, beef) flavor notes used in seasoning blends.
Retest Date
The date after which a batch of an ingredient must be re-analysed to confirm it still meets its specification before further use. Not identical to an expiry date — a material may remain within specification after the retest date, but this must be confirmed by fresh analysis rather than assumed. Retest dates on received ingredients should be logged and factored into inventory rotation and production scheduling.
S
Saccharomyces cerevisiae
The species of yeast used commercially for bread baking (baker's yeast), beer and wine fermentation (brewer's/winemaker's yeast), and as a source of nutritional yeast, yeast extract, and yeast protein. In nutraceutical and food ingredient manufacturing, S. cerevisiae is a source of yeast protein (Section 71), beta-glucans (from cell walls), B-vitamins, and yeast extract (a flavour ingredient rich in glutamates). It is one of the most extensively studied microorganisms and has GRAS status in the USA for food use.
Sourcing Origin
The country or region where an ingredient is manufactured or processed before import, disclosed per SKU for transparency and regulatory purposes.
Specification Sheet (Spec Sheet)
A technical document listing an ingredient's measurable properties — protein content, moisture, particle size, microbial limits — used to confirm a batch matches buyer requirements.
Sports Nutrition
A category of nutraceutical products formulated to support athletic performance, recovery or muscle development, commonly built from protein, amino acid derivative, and functional ingredients.
Spray Drying
An industrial process converting liquid food products (solutions, emulsions, suspensions) into dry powder by atomising the liquid into a chamber with a stream of hot drying air. The droplets lose water rapidly, forming dry particles that fall to the bottom of the chamber. Spray drying is used to produce: protein powders (whey, casein, plant proteins), dairy powders (milk protein concentrate, skimmed milk protein, whey powder), flavour powders (soya sauce powder, cheddar cheese powder, yeast extract), and encapsulated ingredients (microencapsulated vitamins, omega-3 oils). The spray drying process can affect protein denaturation, flavour stability, and particle size — process conditions matter for finished ingredient quality.
Stabilizer
An ingredient that maintains the physical and chemical consistency of a formulation over time, preventing separation, crystallization, or texture breakdown.
Starch
A naturally occurring polysaccharide consisting of glucose units linked by alpha-1,4 glycosidic bonds (in amylose) and alpha-1,4 and alpha-1,6 bonds (in amylopectin). Starch is the primary carbohydrate storage molecule in plants and the raw material for commercial glucose, dextrose, and maltodextrin production by hydrolysis. Common starch sources in the food industry include corn/maize, wheat, potato, rice, and tapioca. In the YNP catalogue, maltodextrin (Section 67) is the most directly starch-derived ingredient.
Steviol Glycoside
The class of naturally occurring glycosides found in the leaves of the Stevia rebaudiana plant that are responsible for stevia's intense sweetness. The most commercially important steviol glycosides are rebaudioside A (Reb A), rebaudioside M (Reb M), and stevioside. Steviol glycosides are 200–400× sweeter than sucrose depending on the specific glycoside composition. Reb A is the most common in commercial stevia products; higher-purity Reb M (sometimes labelled "next-gen stevia") has a cleaner taste profile with less aftertaste. The Codex INS designation is INS 960 (steviol glycosides from Stevia rebaudiana). EFSA and JECFA have established an ADI of 4 mg/kg body weight/day expressed as steviol equivalents.
Sweetener, High-Intensity
A regulatory category for non-nutritive or low-calorie substances that impart sweetness at a fraction of the concentration required for sucrose. High-intensity sweeteners (HIS) are used to replace sugar in reduced-calorie, sugar-free, or diabetic-friendly formulations. The YNP catalogue includes three HIS: sucralose (INS 955, ~600× sucrose), steviol glycosides from stevia (INS 960, ~200–400× sucrose), and aspartame (INS 951, ~200× sucrose). All three are regulated by Codex, EFSA, FDA, and FSSAI; each has its own ADI, approved applications, and use restrictions. See the comparison article in Section 53.
T
Tartrate
The salt or ester of tartaric acid, a naturally occurring dicarboxylic acid found in many fruits (particularly grapes). Tartrate appears in the YNP catalogue primarily as L-Carnitine L-Tartrate (Section 60), where tartaric acid provides the counter-ion that stabilises the salt form of L-Carnitine — reducing hygroscopicity and improving handling and shelf-life characteristics compared to the free base. Tartaric acid itself (Codex INS 334) and potassium hydrogen tartrate (cream of tartar) are used as food acidulants in baking.
Tripeptide
A short-chain peptide composed of exactly three amino acids linked by peptide bonds. Glutathione (gamma-L-glutamyl-L-cysteinyl-glycine) is the most biologically significant tripeptide in supplement formulation — the "master antioxidant" (Section 50). Contrast with dipeptide (two amino acids), oligopeptide (3–20 amino acids), polypeptide (21 or more amino acids), and protein (large polypeptides, typically >50 amino acids).
U
Umami
The savory taste sensation associated with glutamates and reaction flavors, a key flavor target in seasoning and snack ingredient formulation.
Upper Intake Level (UL)
The highest daily nutrient intake level that is unlikely to pose a risk of adverse health effects to almost all individuals in the general population. Exceeding the UL increases the risk of adverse effects. ULs are established by NIH (USA), EFSA (EU), and other bodies. Not all nutrients have established ULs — for some (e.g. biotin), insufficient evidence of adverse effects at high intakes means no UL has been set. Distinct from ADI, which applies to food additives rather than essential nutrients. Relevant YNP products with UL considerations: Niacin (nicotinic acid, UL 35 mg/day NIH / 10 mg/day EFSA), Choline Bitartrate (UL 3,500 mg/day NIH), Ascorbic Acid (UL 2,000 mg/day NIH / 1,000 mg/day EFSA).
V
Vegan
Describes an ingredient or product containing no animal-derived material of any kind — including no dairy, egg, meat, fish, or other animal by-products — suitable for plant-based formulation claims.
Vitamin Premix
See Premix; specifically refers to blends of multiple vitamins formulated for fortification applications.
