What Is Milk Protein Concentrate?

Milk Protein Concentrate (MPC) is produced by membrane filtration of skim milk, concentrating the total milk protein fraction (both casein and whey) while reducing lactose and minerals. Unlike products that fractionate casein and whey separately, MPC retains both proteins in approximately their natural ratio — roughly 80% casein, 20% whey protein. This gives MPC a dual-release amino acid profile: the whey fraction provides rapid absorption, and the casein fraction provides sustained release.

MPC is commercially available in a range of protein contents (MPC40 through MPC85), with higher numbers indicating more concentrated protein and less residual lactose. The grade significantly affects how the ingredient behaves in food applications — higher-grade MPCs are more protein-dense; lower-grade MPCs retain more lactose and may behave more like skim milk powder in bakery or confectionery contexts.
