What to Specify for Each Ingredient
Whey Powder: Protein % (confirm 11–15% range and fat % — important for bakery applications where fat level affects texture). Lactose % (70–75% typical). Microbiological parameters (TPC, yeast/mould, coliforms).
Milk Protein Concentrate: The grade (MPC40, MPC70, MPC80, MPC85) must be specified — this is not a minor detail. Each grade has different protein concentration, different functional properties, and different cost. An MPC40 and an MPC80 are not interchangeable ingredients. Also confirm casein:whey ratio (should be ~80:20 for standard MPC grades).
Skimmed Milk Protein: Confirm protein % and whether it is standard non-fat dry milk (NFDM/SMP) or a more concentrated skim milk protein product. The distinction affects how it performs in dairy and bakery applications.
Allergen and Regulatory Considerations
