The Extrusion Challenge for Meat Analogues
High-Moisture Meat Analogue (HMMA) extrusion — the process used to produce fibrous plant-based burger patties, chicken-style strips, and similar products — relies on protein gelation at high temperature and shear. Soya Protein Isolate (90% protein) is the most functionally well-established protein for HMMA because its heat-set gelation properties under extrusion conditions are well-characterised. Pea protein is increasingly used as a partial replacement in soy-free HMMA formulations, though it typically requires process adjustment and may produce a less fibrous texture without optimisation.
The Beverage Stability Challenge
Plant proteins in liquid suspension can settle, cause turbidity, or produce beany/grassy off-notes at beverage concentrations above approximately 3–5%. Key considerations:
Stabilisation: Xanthan Gum (S.36) or LM Pectin (S.24) are appropriate stabilisers for plant-based protein beverages — they maintain suspension without affecting protein functionality.
Flavour masking: Pea protein's earthy note and soya protein's beany note require flavour systems at typical RTD concentrations. Vanilla is generally insufficient alone at high protein levels; chocolate, caramel, and fruit flavours provide better masking.
Heat stability: Pea and soya proteins are generally heat-stable enough for pasteurisation and UHT processing, making them suitable for RTD shelf-stable formats.
