Potassium Sorbate
Potassium Sorbate (E202) is the potassium salt of sorbic acid, offering significantly improved water solubility (58g/100mL at 20°C) compared to sorbic acid itself, making it the preferred form for aqueous food preservation applications. It inhibits yeast and mold growth by disrupting the enzymatic function of microbial cell membranes, with broad spectrum efficacy across Aspergillus, Botrytis, and common food spoilage yeasts. It has no meaningful antibacterial activity and is therefore typically combined with sodium benzoate in broad-spectrum preservation systems.
