Heavy Metals in Bulk Ingredients: What Buyers Need to Know

Why Heavy Metals Matter in Ingredient Sourcing

Heavy metals are naturally occurring elements that can accumulate in soils, water, and plant and animal tissues. In food and nutraceutical manufacturing, they represent a safety and regulatory risk: lead, arsenic, cadmium, and mercury are all toxic at sufficient concentrations, and chronic dietary exposure — even at low levels — has been associated with health effects. Regulatory agencies in all major markets require that food ingredients and finished products meet defined heavy metal limits.

The risk is not uniform across ingredients. A synthetic amino acid produced under controlled industrial conditions carries different risk than a marine-derived protein or a mineral extracted from contaminated soil. Understanding which ingredients to scrutinise most carefully is as important as knowing the limits themselves.

The Four Primary Heavy Metals

### Lead (Pb)

  • Source: Industrial contamination, lead-containing soils, paint, piping
  • Risk in ingredients: Present in some mineral ingredients, botanical extracts, and cocoa (particularly cocoa grown in contaminated soils)
  • JECFA/WHO: Provisional Tolerable Monthly Intake (PTMI) established; JECFA withdrew the PTWI for lead in 2010 due to evidence of harm at all exposure levels — there is no safe threshold
  • FDA (USA): Maximum levels specified in FDA lead action levels; California Prop 65 establishes very low limits relevant for supplements sold in California

### Arsenic (As)

  • Source: Geological contamination, agricultural chemicals, industrial pollution; inorganic arsenic (iAsAs) is the toxic form
  • Risk in ingredients: Marine ingredients (fish collagen, sodium hyaluronate), rice-derived ingredients (rice protein, maltodextrin from rice starch)
  • JECFA/WHO: PTWI withdrawn (2010) — replaced by Benchmark Dose Lower Confidence Limit (BMDL01) as no safe threshold confirmed; EFSA has established a reference level
  • Key distinction: Total arsenic vs inorganic arsenic — total arsenic is often high in marine-derived ingredients due to organic arsenobetaine (largely non-toxic); inorganic arsenic is the toxicological concern

### Cadmium (Cd)

  • Source: Industrial emissions, phosphate fertilisers, contaminated soil
  • Risk in ingredients: Cacao/cocoa (one of the most significant cadmium-accumulating food crops), some plant-based proteins, flaxseed
  • JECFA/WHO: PTMI: 25 μg/kg body weight per month
  • Cocoa: Particularly relevant — cocoa from certain origins (Latin America) can have elevated cadmium; Indonesia-sourced cocoa (as in the YNP catalogue) generally has lower cadmium than some South American origins

### Mercury (Hg)

  • Source: Industrial pollution, atmospheric deposition into water; methylmercury (organic form) accumulates in marine food chains

How to Review Heavy Metals Results on a COA

Three things to check:

1. Which metals were tested? A COA reporting only lead and arsenic, but not cadmium or mercury, for a marine ingredient is incomplete. All four should be tested.

2. Is the arsenic result total arsenic or inorganic arsenic? For marine ingredients, total arsenic can be high due to organic arsenobetaine — confirm which is being reported.

3. Against which standard is the result interpreted? Different markets have different limits (USP, EU, FSSAI, FDA). Confirm the COA references limits relevant to your target market.
